Honey Ice Popsicles Recipe

 

When the sun’s out and you’re looking for something light, fruity and refreshing, these Honey Ice Popsicles are just the thing. Naturally sweetened with Just Bee Honey, they’re easy to make, free from refined sugar, and bursting with summery flavour—perfect for cooling down on warmer days.

You can use any honey from our range in this recipe, but we especially love Vitality Honey for its bright, tangy lemon flavour. It adds a gentle citrusy zing that works beautifully with fresh berries and makes these ice lollies taste as refreshing as they look. Plus, it’s rich in ginseng and vitamins B1 – B12, making it a lovely little energy boost too.

Simple, wholesome, and ideal to keep in the freezer for whenever you fancy a sweet (and guilt-free) treat.

Ingredients

 (makes approx. 6–8 popsicles)

  • 1½ cups (about 200g) fresh or frozen berries (strawberries, raspberries, blueberries or a mix)
  • 1 ripe banana (or ½ cup natural Greek yoghurt for a creamier version)
  • Juice of ½ a lemon
  • 3 tablespoons Just Bee Honey (we recommend Vitality Honey for its tangy lemon kick)
  • ½ cup (120ml) water or coconut water

You’ll also need:

  • Ice lolly moulds and sticks

Method

1. Blend the Ingredients:

Add the berries, banana (or yoghurt), lemon juice, Just Bee Honey and water to a blender. Blend until smooth. Taste and adjust the sweetness with a little more honey if needed.

2. Pour into Moulds:

Pour the mixture into your popsicle moulds, leaving a little space at the top. Insert the sticks and tap the mould gently to remove any air bubbles.

3. Freeze:

Place in the freezer for 4–6 hours, or until completely frozen.

4. Serve and Enjoy:

To release the popsicles, briefly run the outside of the moulds under warm water. Serve immediately or store in the freezer for up to a week.
