Zesty Lemon Honey Cake Recipe

You Will Need:

    •         1 cup (225g) unsalted butter, softened

    •         1 cup (200g) granulated sugar

    •         4 large eggs

    •         4 tablespoons Just Bee Honey

    •         Zest of 2 lemons

    •         1 ½ cups (190g) all-purpose flour

    •         2 teaspoons baking powder

    •         ½ teaspoon salt

    •         ¼ cup (60ml) milk

    •         1 teaspoon vanilla extract

Lemon Honey Syrup:

    •         Juice of 2 lemons

    •         2 tablespoons Just Bee Honey

Method

Step 1:

Preheat the Oven: Set your oven to 175°C. Grease and line a round cake pan (9 inches) with parchment paper.

Step 2:

Cream the Butter and Sugar: In a large mixing bowl, mix the butter and sugar until light and fluffy. This forms the base of your cake, ensuring it’s light and airy.

Step 3:

Add Eggs and Honey: Beat in the eggs to your butter and sugar mixture, one at a time, ensuring each is fully incorporated before adding the next. Stir in the 4 tablespoons of Just Bee Honey and lemon zest, mix until just combined.

Step 4:

Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, and salt. This ensures your cake has a soft, uniform texture without any lumps.

Step 5:

Mix Dry and Wet Ingredients: Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Add the vanilla extract and mix until smooth. Be careful not to overmix to keep the cake tender.

Step 6:

Bake: Pour the batter into the prepared cake pan. Smooth the top and tap the pan lightly to remove any air bubbles. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the centre comes out clean.

Step 7:

Prepare the Lemon Honey Syrup: While the cake is baking, combine the lemon juice and 2 tablespoons of honey in a small saucepan. Heat over medium until mixture is slightly thickened.

Step 8:

Finish the Cake: Once the cake is done, remove it from the oven and while still warm, poke holes over the top with a skewer. Slowly drizzle the lemon honey syrup over the cake, allowing it to soak in.

Step 9:

Cool and Serve: Let the cake cool in the cake tin for 10 minutes, then turn out onto a wire rack to cool completely. The syrup will infuse the cake with a moist, luscious texture and amplify the lemon and honey flavours.

I’d just like to make a comment about your turmeric honey, if you are on blood thinning medication you should not be taking turmeric as it too thins the blood.
