Lemon & Honey Chicken Traybake Recipe
Bright, comforting and wonderfully simple, this Lemon & Honey Chicken Traybake is the kind of recipe that supports you on busy days when you still want to eat well. Juicy chicken thighs roast with fresh lemon, garlic and a spoonful of Just Bee, creating a dish that feels nourishing, balanced and full of flavour with very little effort.

Ingredients
(serves 4)
• 6–8 bone-in, skin-on chicken thighs
• 2 lemons, one sliced and one juiced
• 3 garlic cloves, lightly crushed
• 2 tablespoons olive oil
• 2 tablespoons Just Bee Vitality Honey
• 1 teaspoon dried thyme or a few fresh sprigs
• Salt and freshly ground black pepper
Optional additions:
• A handful of baby potatoes or red onion wedges
• Fresh parsley for garnish
Method
1. Preheat the Oven:
Heat your oven to 200°C (180°C fan). Line a large roasting tray with parchment paper for easy clean up.
2. Prepare the Chicken:
Arrange the chicken thighs in the tray, skin side up. Tuck the lemon slices and crushed garlic around them.
3. Make the Glaze:
In a small bowl, whisk together the olive oil, lemon juice, Just Bee Vitality Honey, thyme, salt and pepper until smooth and glossy.
4. Coat and Roast:
Spoon the glaze evenly over the chicken, ensuring each piece is well coated. Roast for 35 to 45 minutes, until golden and cooked through with lightly crisp skin. Baste once during cooking if you like for extra depth of flavour.
5. Serve and Enjoy:
Allow to rest for a few minutes before serving. Spoon over the pan juices and scatter with fresh parsley if using.

Does not sound that simple. Sounds rather messy using thighs which have skin and bone in. Much prefer chicken breasts without skin and bone. much easier to deal with.

What a lovely interesting newsletter. Love the traybake recipe will try it out. I must have missed the one where you asked for feedback, so can i say that my absolute favourite so far is the strawberry and cream, but i think it was only available at christmas time, am i right? Also a few more ‘special offers’ would be appreciated. I have so many people now eating your hunny, i gave some out as presents at Christmas too, even my daughter is eating it, after she made such a song and dance about her ‘just buy it from the supermarket’ remark 😆….. another convert!
I did buy the big round mug but i broke the handle off, so need to replace it when it’s on offer! I do agree stronger flavours would be nice! Thank you for a great product!
