Honey Parsnip Soup Recipe

Creamy, comforting and naturally sweet, this Honey Parsnip Soup is the perfect way to warm up on chilly days. It’s made with wholesome ingredients and finished with a swirl of Just Bee Honey for a touch of natural sweetness that really brings the flavours together.

You can use any of our honeys in this recipe, but we highly recommend Turmeric+ Honey. The golden turmeric adds a gentle warmth and spice that pairs beautifully with parsnip, creating a rich, nourishing bowl of soup that feels as good as it tastes.

Whether you’re batch cooking for the week or serving a cosy lunch with crusty bread, this soup is simple, satisfying and full of goodness.

Ingredients

 (serves 4)

  • 1 tablespoon olive oil or butter
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 500g parsnips, peeled and chopped
  • 750ml vegetable or chicken stock
  • 3 tablespoons Just Bee Honey (we recommend Turmeric+ Honey for a warming twist)
  • Salt and pepper, to taste
  • Optional: a splash of cream or milk for added richness

To serve:

  • A swirl of yoghurt or cream
  • Extra drizzle of honey
  • Chopped parsley or toasted seeds (optional)

Method

1. Sauté the Base:

Heat the olive oil or butter in a large saucepan over medium heat. Add the chopped onion and cook gently for 5–6 minutes until soft and translucent. Stir in the garlic, cumin and coriander, and cook for another minute until fragrant.

2. Add the Parsnips:

Add the chopped parsnips to the pan and stir to coat in the spices. Pour in the stock, bring to the boil, then reduce the heat and simmer for 20–25 minutes, or until the parsnips are soft.

3. Blend Until Smooth:

Remove from the heat. Add the honey, then use a stick blender (or transfer to a jug blender) to blend until smooth and creamy. Add a little extra stock or water if you prefer a thinner consistency.

4. Season and Finish:

Taste and adjust the seasoning with salt and pepper. For extra creaminess, stir in a splash of cream or milk before serving.

5. Serve:

Ladle into bowls and top with a swirl of yoghurt or cream, a drizzle of Just Bee Honey, and a sprinkle of chopped herbs or seeds if you like.
